Chocolate Granola Apple Wedges


Here a sweet and healthy recipe that is sure to be a hit with the kiddos as well! Photo credit goes to Eat Yourself Skinny...check out this blog for more awesome recipes! 

What you need:
1 large apple, cut into 16 wedges
2 oz. semi-sweet chocolate chips
1/3 cup low-fat granola (I used cinnamon-apple flavored)

What you do:
Begin by melting your chocolate in a small bowl in the microwave in 15 second intervals, stirring each time, until your chocolate is completely melted.  Place your granola in another small bowl, set aside.

Slice your apple into 16 wedges.  Dip your wedges, skin side up, into the chocolate and then dredge in the granola.  Enjoy!

Frozen Yogurt Drops


Yes...This really is as easy as it looks! Fill a zip lock bag or piping bag with your yogurt or choice. Squeeze out onto a cookie sheet and freeze. In less than an hour you will have a yummy treat!

Tilapia Tacos


This is a tried and true recipe in our home that the whole family enjoys! Pulled from Fitness Magazine, these Tilapia Tacos are sure to be a healthy hit! 

Makes: 4 servings with leftovers
Prep time: 15 minutes
Cook time: 5 minutes

Ingredients
1 lime
cup grape tomatoes, chopped
1/2 cup cilantro, chopped
1/2 jalapeno, seeded and finely chopped
1/2 sweet onion, finely chopped
1/2 teaspoon salt
1 cup plain nonfat Greek yogurt
2 tablespoons mayonnaise
2 cups green or red cabbage, sliced into narrow strips
1 tablespoon olive oil
1 pound tilapia fillets
1/4 teaspoon chili powder
1/4 teaspoon black pepper
8 small whole wheat tortillas
1 avocado, cut into 8 long slices
Directions
1. Cut lime in half. Squeeze juice from half and slice other half into 4 thin wedges. In a bowl, combine tomatoes, cilantro, jalapeno, onion, 1/4 teaspoon salt, and half the lime juice.
2. In another bowl, mix together yogurt, mayonnaise, and remaining lime juice. Combine cabbage and 2 tablespoons of yogurt sauce in another bowl; reserve extra sauce.
3. Heat olive oil in a large pan. Sprinkle tilapia with chili powder, black pepper, and remaining 1/4 teaspoon salt; cook 3 minutes. Turn; cook 2 minutes more.
4. Place 2 tortillas, 1 lime wedge, and 1/4 of the tilapia on each plate. Serve with salsa, cabbage, avocado, and sauce.

Eggplant Zucchini Bolognese


This delicious and easy recipe is a great way to incorporate many different types of vegetables into one quick dish! It is from Taste of Home. To make it vegan we swapped out the ground beef for Boca crumbles. Although it says it serves 8, we fed 5 and still have half of it left over for lunch today! Enjoy.

Ingredients

  • 1 package (16 ounces) penne pasta
  • 1 small eggplant, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1/4-inch slices
  • 1 medium yellow summer squash, cut into 1/4-inch slices
  • 1 cup chopped onion
  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound lean ground beef (90% lean)
  • 1 can (28 ounces) tomato puree
  • 1 tablespoon Italian seasoning
  • 1 tablespoon brown sugar
  • 8 teaspoons grated Parmesan cheese

Directions

  • Cook pasta according to package directions.
  • In a large bowl, combine the eggplant, zucchini, squash, onion, oil, garlic, salt and pepper. Transfer to two 15-in. x 10-in. x 1-in. baking pans coated with cooking spray. Bake at 425° for 20-25 minutes or until tender.
  • Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomato puree, Italian seasoning and brown sugar.
  • Drain pasta; stir in tomato mixture and roasted vegetables. Sprinkle with cheese. Yield: 8 servings.

Formula 1 Recipes

Aloha Delight 
  • 1 cup of low fat milk or soy milk
  • 2 tablespoons Formula 1 Vanilla
  • 1/2 teaspoon coconut extract
  • 1/2 teaspoon pineapple extract
  • 1 tablespoon orange juice
  • 3 ice cubes
Combine all the ingredients in a blender until smooth.
Serve chilled, garnished with fresh pineapple and a sprig of mint.
Excellent source of Vitamin C, B1, B2, B1, Iron and Calcium.
Good source of Vitamin A and B6.
Serves 1 - Total Calories 186 - Protein 17g - Carbohydrate 24g - Fat 1g - Cholesterol 4mg - Dietary Fiber 3g - %Calories from Fat 6%

Apple Pie Shake 
  • 1 cup of low fat milk or soy milk
  • 2 tablespoons Formula 1 Vanilla
  • 1/2 teaspoon cinnamon
  • 1 small apple or 1/4 cup apple sauce
  • dash of nutmeg
  • 3 ice cubes
Combine all the ingredients in a blender until smooth.
Serve chilled.
Excellent source of Vitamin C, B6, B12, B2, Folacin, Zinc, Iron and Calcium.
Good source of Vitamin A.


Banana Fruit Shake 

  • 2 tablespoons Formula 1 Vanilla
  • 4 ounces nonfat yogurt
  • 4 fluid ounces water
  • 1/2 cup frozen peach slices
  • 1/2 medium banana
  • 3 ice cubes
Combine all the ingredients in a blender until smooth.
Serve chilled, garnished with a slice of banana.
Excellent source of Vitamin C, B6, B1, B2, Iron and Zinc.
Good source of Calcium.

Black Forest Shake 

  • 2 tablespoons Formula 1 Chocolate
  • 8 fluid ounces low fat milk or soy milk
  • 1/2 teaspoon black walnut extract
  • 1/2 medium banana
  • 4 ice cubes
Combine all the ingredients in a blender until smooth.
Serve chilled, garnished with chocolate sprinkles.
Excellent source of Vitamin C, B6, B1, B12, B2, Calcium and Zinc.
Good source of Vitamin A and Iron.

Combine all the ingredients in a blender until smooth.

Coffee Shake
  • 2 tablespoons Formula 1 Vanilla

  • 1/2 peach
  • 1 tablespoon instant coffee
  • 3 ice cubes
Combine all the ingredients in a blender until smooth.
Serve chilled, garnished with a slice of peach.

Good source of Vitamin A.

Cranberry Citrus Blast

  • 2 tablespoons Formula 1 Vanilla
  • 1/2 teaspoon orange extract

  • 4 teaspoons unsweetened cranberry concentrate
  • 3 ice cubes
Combine all the ingredients in a blender until smooth.
Serve chilled, garnished with a slice of orange.
